The New Norcia Hotel has been welcoming guests since it was opened by the Benedictine monks in 1927. Nestled beneath gum trees on a rise overlooking Australia's only monastic town, the columns, terrazzo tiles, and Latin word 'Salve' - 'Welcome' - on the threshold, tell you that this is no ordinary country pub. Still owned by the monks, the Hotel is a practical expression of their tradition of hospitality that has offered rest to weary travelers for centuries. Rick and Joanna Ryan and their team welcome visitors and overnight guests to enjoy a slice of Spain in the Australian bush.
